Eine mit Aufmerksamkeit und großer Sensibilität recherchierte Mischung, bestehend aus zwei Reben, der Sorte; aus Malvasia und der alten Vitovska-Rebe stammend, um einen Wein mit besonderem Charakter zu schaffen, der schon von Anfang an überraschen kann. beim ersten Schluck.

Im kleinen Weiler Doberbò del Lago, nur wenige Kilometer von der slowenischen Grenze entfernt, im pulsierenden Herzen des Görzer Karstes; Die  Kovac-Familie ist seit Jahrhunderten hier. Wir befinden uns in einem Land der Grenzen und Erinnerungen, Schlachtschauplatz des blutigen Ersten Weltkriegs und eingebettet in eine sehr eindrucksvolle Landschaft, die von den roten Farben der Eisenfelsen und den weißen Farbstoffen der Kalksteinfragmente gezeichnet ist. 

Unterirdische Flüsse, zerstörte Mauern und malerische Höhlen bedecken das Land seit Jahren, was den Weinbau sehr schwierig macht. Das weiß auch die Kellerei RUJ der Firma Kovac, die seit mehreren Generationen in diesen felsigen Landen lebt. 

Zunächst entschieden sich Schmiede (vom slowenischen Kovač), dann Winzer und Bauern einen Agritourismus eröffnen und den Touristen die Möglichkeit bieten; um ihre exklusiven und schmackhaften lokalen Produkte, einschließlich Wein, zu probieren.

Im Laufe der Jahre haben sie sich immer mehr spezialisiert; bei der Herstellung des Bacchus-Nektars, auch den Bau eines spektakulären unterirdischen Kellers, der in 300 Meter Tiefe in den Felsen gegraben wurde. von 10 Metern, in dem die Temperatur ist; frisch und konstant gehalten 

ganzjährig.

Das Weingut Ruj ist eines der beliebtesten Weingüter der Welt. geführt von 2 Brüdern unter der sorgfältigen Führung ihres Vaters Aldo. Ivan ist der Hüter der Weinberge, und Andrej kümmert sich um den Keller, kümmert sich um Verkauf und Marketing. Angebaut werden die typischen autochthonen Rebsorten der Gegend, wie Terrano, Vitovska und Malvasia. Die Weinberge, die sich über 4 Hektar Rebfläche erstrecken, werden das ganze Jahr über (aber besonders im Sommer) von der Bora berührt, einem katabatischen Wind, der aus dem Osten/Nordosten in Richtung des gesamten Golfs von Triest weht. 

Darüber hinaus haben die Reben ihre Wurzeln in einem geschichteten Gelände unterschiedlicher Zusammensetzung, in dem eine Linie aus roter Erde die verschiedenen Ebenen aus Kalkstein, Ton, Muscheln und Stalaktiten verbindet.

Da das Karstgelände durchschnittlich ist von 20/30 cm mit roter Erde bedeckt, müssen wir mit dem Hammer großer Bagger für alle Reihen 40 cm breite und 1 Meter tiefe Gräben ausheben. Dann werden diese Gräben von dem felsigen Material geleert und durch rote Erde ersetzt, die in einigen Dolinen in der Nähe gefunden wurde.

Diese beschwerliche Arbeit bringt den Pflanzen langfristig viele Vorteile. Nach 4 Jahren, in denen die Rebe die Kraft der Wurzeln entwickelt hat, haben wir eine größere Nährstoffaufnahme, aber vor allem, wenn die Wurzeln einen Meter in die Wand des Grabens reichen, haben wir weniger Wasserstressprobleme.
